Buffalo chicken pizza recipe searches want measurements. Brooklyn's Finest Pizza does not publish its dough, its sauce, or its oven. The menu line is short on purpose: buffalo chicken pizza, large, 8 slices, $23.99, buffalo chicken and mozzarella cheese. That is the pie you can order. The home version below is a separate thing. It is not a recreation of the shop pie, and it will not taste the same.
If you wanted the shop pie, skip the recipe and use the buffalo chicken pizza page or the menu. If you wanted to cook, use the home notes and do not tell anyone it is our recipe.
A plain home version
Start with pizza dough you already trust, or a plain crust. Stretch it, sauce it lightly with tomato sauce or with a thin layer of hot sauce mixed with a little melted butter, and cover it with mozzarella. Toss cooked chicken, the kind you have already baked or poached and shredded, with hot sauce until it is coated, not swimming. Scatter the chicken over the cheese. Bake on the hottest oven setting you can, on a preheated pan or stone if you have one, until the cheese is melted and the bottom has color. Pull it before the chicken dries out.
Blue cheese is common on buffalo wings and on some pies. Our pizza description does not mention blue cheese. Our buffalo chicken roll does: that roll is chicken, blue cheese, and hot sauce, at $9.49, and it is a roll, not the pie. If you want blue cheese at home, add it as a drizzle after the bake or as crumbles before, and know you have left the menu description behind. If you do not like blue cheese, leave it off. The shop pie, as written, is buffalo chicken and mozzarella.
What usually goes wrong at home
Wet chicken. Sauce the chicken and let it sit in a strainer for a minute so you are not pouring liquid onto the dough. Too much cheese plus too much chicken sinks the center. A crowded pie needs a hotter oven and a shorter bake, not a longer one. Cold dough will not brown. If the bottom is pale, the next pie goes on a hotter surface, not under more toppings.
Heat is the other variable. Frank's-style cayenne sauce is the usual buffalo base. A hotter sauce is a different pie. Taste the chicken before it goes on the dough. You cannot fix a pie that is already too hot without burying it in cheese, and burying it makes the bake worse. This is home cooking. It is not a spice list from our kitchen.
The pie on our menu
Order the buffalo chicken pizza when you want the large we already make. Eight slices, $23.99, buffalo chicken and mozzarella. It is a specialty large, in the same family as the hot honey roni and the chicken bacon ranch, which is a different chicken pie: bacon, ranch, tomatoes, and mozzarella. Do not mix the names up. Ranch on buffalo chicken is a choice some people make at home. It is not the description of our buffalo pie.
A buffalo chicken wrap and buffalo wings are also on the menu if you want the flavor without a pie. The wrap is a chicken cutlet with lettuce, hot sauce, and bleu cheese dressing, at $10.49. Wings are their own appetizer. Order the item whose description matches the food you pictured.
Cook, or just order
Order at Order Online, which is order.brooklynsfinestsi.com, or call (718) 815-7070. On an iPhone or iPad, the app sends the same menu. The address is 1250 Hylan Boulevard, Staten Island, NY 10305. Pickup, dining room, or delivery inside 4 miles. Hours end at 10:00 PM, or 10:30 PM on Friday and Saturday.
A buffalo chicken pizza recipe is a good Saturday project. The pie on our menu is the version that does not need your oven. Use one or the other. Do not follow this post and then complain that the shop pie missed a step we never printed. The menu says buffalo chicken and mozzarella. That is the order.
If the home pie is for a game, make it before kickoff and reheat slices on a sheet, not in a stack. Our shop is not a sports bar, and it closes at 10:00 or 10:30, so a late order has to be in before that. The NFL food specials on the specials page are pies, wings, and knots, not a buffalo chicken recipe card. Order a special as it is written if that is the bundle you want. The buffalo pie is its own line at $23.99 when you want that pie and nothing bundled with it. Eight slices, mozzarella, buffalo chicken. Add a plain pie if half the table wants out. That is the whole decision, and the cart is the price you pay, not a guess from a recipe blog. Order the pie when you do not want to cook, and add a plain pie if the table splits.
